Baked Caramel Popcorn

6 quarts popped popcorn

1 cup butter or Margarine (if using margarine make sure it is a stick not whipped)

1/2 white corn syrup (corn syrup is found where the pancake syrup is)

1/2 teaspoon soda

2 cups brown sugar

1 teaspoon salt

1 teaspoon vanilla

Have your popcorn ready and set aside in a very large bowl

Use the biggest kettle you have, like the dutch oven that came with your pan set. Remember when cooking candy it is important to use a good heavy grade of pan.

Melt butter or margarine and stir in brown sugar, corn syrup, and salt. Bring to a boil. Keep boiling for about 5 minutes. If it is boiling to hard turn down the heat a little, keep a close eye on it and stir if frequently as sugar burns very quickly. I stir mine slowly but constantly but be very careful not to burn yourself. Use a wooden spoon so that the handle will not get hot.

Remove from heat then add the vanilla and soda, stir to mix then pour it over your popcorn. Stir the popcorn until most is coated. Then dump it onto a cookie sheet. It may take a couple cookie sheets as you want it to be in one layer not in a big clump. Place the coated popcorn in a preheated oven at 250° and bake about 1 hour.

Remove from oven and break into pieces. I just use the end of the handle of my wooden spoon to seperate the pieces. Store in any container that is covered or just place in zip lock bags.

This is really very easy to make and it tastes so good and it will keep until you eat every bit.
