What to buy at your grocery store.

1 Ham

1 package baking bags

1 lb. box of Butter or Margarine

Milk

For Mashed Potatoes

1 5 lb. bag of potatoes

For Sweet Potatoes Casserole

1 large can or two small cans of cut up sweet potatoes

1 package miniature marshmallows

For Banana Cream Pie

3 nice size bananas

1 9 inch ready make gram cracker crust

1 large box of cooked pudding mix(You can use the instant, but the cooked kind tastes better.

For apple or Cherry Pie

9 inch ready made regular pie crusts

1 can either apple or cherry pie filling


Glazed Ham

I buy the cheapest one I can get, in the end they all taste about the same. A nice picnic ham with bone in it is very good. They may have a little more fat, so buy a little bigger one so you can cut off the extra fat after baking. Spiral hams or precut hams, are nice as you don’t have to slice them, but they cost more and I find they dry out easier during baking. If you do decide to use a precut spiral ham I strongly suggest that you use a baking bag to bake it in as it will stay moist. I recommend using a baking bag no matter what type of ham you chose however because you can get the juice for making gravy easier as well.

There is also good temperature and baking time guides listed in the instructions that come with the bags.I like to cook a picnic ham that is about 5 lbs at 325 for about 1/2 to 2 hours. Buy about a 1/2 lb. of ham per person, and if you want left overs or of any of your dinner companions eat for two, add a few extra pounds. If you get a ham with a bone it is great for making bean soup for another meal a different day. Just freeze it until you feel like making it. I’ll tell you an easy bean soup recipe later.

To glaze the ham combine 1 cup of brown sugar, 2 tablespoons melted butter or margarine, and 1/3 cup of any kind of fruit juice, orange, pineapple etc. In a small mixing bowl. Stir until blended, then simply poke some holes in the ham and spoon the brown sugar mixture over ham.

If you want to make gravy don’t glaze your ham until the last 1/2 hour of baking, draining off the juice before you put a glaze on it. Drain the juice in a large frying pan and add about 1/2 cup water to the juice, then mix 3 tablespoons cornstarch with a little water to dissolve the cornstarch and the add it to the boiling juice, it will thicken quite quickly, if it gets to thick, just add more water, water off the boiled potatoes is very good to use for this. But always dissolve the corn starch in cold water first. You can use flour instead of cornstarch, but double the amount of flour.


Mashed Potatoes

Peel and wash potatoes. Then place in a pan large enough to be able cover the potatoes with water. Fill pan with enough water to completely cover the potatoes then add 2 teaspoon salt, boil until the potatoes become soft approximately 20 minutes or until; when you can stick a fork in them easily. Remove for heat and drain them well and place them into a large mixing bowl. In a separate microwavable bowl heat about 1/4 cup milk with a couple tablespoons butter or margarine. Microwave until the butter melts. Pour the milk and butter mixture over potatoes and mash with an electric mixer until nice and smooth. Place a nice dab of butter or margarine on top and serve.

Sweet Potato Casserole

Sweet potatoes are easy too, use one large can or two smaller cans, drain off the water in them. Place in a casserole , add about ¾ cup brown sugar, and a couple tablespoons butter or margarine , cover with foil and bake, with the ham, scalloped potatoes etc, and about 10 minutes. before serving cover the top with miniature marshmallows, sprinkled with cinnamon.marshmallows are optional, but make it look nice and taste so good.


Whole Kernel Corn

If serving canned whole kernel corn, use two cans of corn, bring to a good boil, drain and put butter or margarine in them and serve.

Scalloped Corn

You will need 2 cans of cream corn 1 tube of saltine crackers, or about 3/4 cup bread crumbs ( bread crumbs can be bought in the grocery store usually in the baking department. get the unseasoned. If you use the crackers in the tube, just crush them right in the tube with your fingers or place on a flat surface and use the bottom of a glass or cup to crush them. You don’t have to be to fussy on how crushed they are, just nicely broken up, like oatmeal. Spray a deep casserole dish with cooking spray for easy clean up, Place the creamed corn in the dish then add the crushed crackers or bread crumbs. Then in one of the empty corn cans, place two eggs, stir briskly with a fork to mix the white and yoke together then add enough milk so that the can is about 3/4 full and mix with the eggs, pour mixture over the top of the corn, crackers or bread crumbs, and stir. Just enough to mix it all up.Hand crush any unsweetened cereal like Corn Flakes or you can use bread crumbs over the top of the casserole and add a dab of butter or margarine on top. Place this in the oven with the ham about 40 minutes before you are ready to serve the ham.


Fruit Salad

For a nice side dish I like to make an easy fruit salad, you can add almost any fruit you like to it.I like apples sliced, banana’s sliced, maraschino cherries ( they must be well drained). What ever fruit you use drain well. Simply add frozen whipped topping, that has been thawed, and miniature marsh mellows. Top with sliced banana (place the banana slices in a little lemon juice to keep them from browning) slice cherries in halves , add what ever you like, if you like nuts add some.


Hot Rolls

For the hot dinner rolls buy a couple of frozen bread dough, and thaw. Roll in balls, and bake .You can add raisins, or currents, cranberry’s , or leave plain. Shape them any way you like, you can even bake them in cup cake paper if you want. Rub the top of the buns with melted butter or margarine. Bake at 350° until golden brown, serve warm.


Banana Cream Pie

Use your microwave to cook the pudding, then there will be no scorching and its easy, place the pudding and milk in a microwave safe bowl, I heat it 3 minutes. At a time and then stir, and put it back in for another 3 minutes. until you know its boiling. Then remove. Cut up the bananas into your crust, pour the pudding over and refrigerate until you want to serve it. Add cool whip or whip your own cream, always use the heavy whipping cream as it will not break down as easy as the regular whipping cream.

Apple or Cherry Pie

If you want to serve a apple pie or cherry something like that, buy the deep dish ready make pie crust unbaked in the freezer, they are cheap, let thaw, add canned apples or cherries, put about 1/3 cup sugar over the filling, in the crust. Use the second crust as the top crust. I tip the crust over on a flat surface and pat it down, then I just cut it into narrow strips and lay them across the filling for the top. Add put a little milk or cream on top of pie, then the sugar and cinnamon bake at 350° until golden brown.

One pie should serve 6 people
