Just in time for the holidays! Divinity, Fudge ……. Homemade Caramels!
2/3 cup Shortening
1 2/3 cup Sugar
1 1/4 cup Mashed Bananas
1 1/4 teaspoon Baking Powder
1 1/4 teaspoon Baking Soda
1 teaspoon Salt
2 1/3 cup Flour
2/3 cup Buttermilk or Sour Milk
In a large bowl mix together the shortening, sugar, eggs, bananas, baking powder, baking soda and salt.
Blend together until smooth. Gradually add flour and milk alternately until all ingredients are blended together.
Grease and flour a 9″ x 13″ cake pan and pour your batter into it.
Bake at 375° for approximately 30 minutes or until you can insert a toothpick or knife into the center and it comes out clean.
Frost once cake has cooled.
2 tablespoons butter
2/3 cup packed brown sugar
1/8 teaspoon salt
2/3 cup canned milk (you can use regular milk if need be)
1/2 teaspoon vanilla
2-3 cups powdered sugar
In a medium sized saucepan melt butter then add brown sugar, salt, and milk.
Bring to a boil over medium heat stirring frequently. Let mixture boil for 1 minute then remove from heat and add 1/2 teaspoon vanilla. Then gradually add the powdered sugar until the mixture becomes a nice easy to spread consistency.
